Chicken Fajitas Recipe
Fajitas are a dish made up of warmed flour tortillas which are filled with seasoned meat, fish or chicken and other condiments such as salsa, peppers, onions, rice and beans.
Mexican fajitas actually originated in Texas in the late 1930's. Fajita comes from the Spanish word "faja" meaning "sashes". It refers to the type of meat typically used for fajitas which is skirt steak. This steak cut is the beef's diaphragm muscle and is not a very desireable cut so it was given to Hispanic farm and ranch hands as a partial payment for their work. The workers would then pound the meat thin and marinate it lime juice The meat would then be cooked over a mesquite wood fire, cut into strips and placed in flour tortillas. The dish was referred to as "tacos de fajitas".

Ingredients
- 6 to 8oz chicken breasts, sliced
- 1 green bell pepper, sliced
- 1/2 red pepper, sliced
- 1/2 cup sliced onion
- 1/2 sliced zucchini
- 2 cloves garlic, chopped
- 2 tablespoons olive oil
- salt
- pepper
Preparation
In a saute pan or heavy skillet add olive oil and saute onions, garlic and peppers for a couple of minutes. Next add chicken and zuchini and continue to cook for 2 to 3 minutes, stir often. Add salt and pepper to taste and cook an additional 3 minutes or til chicken is done. Serve on top of rice or beans or place in tortillas.
This Fajitas recipe can be varied to individual taste and the ingredients can easily be increased for more servings.
