Clam Sauce

White Clam Spaghetti Sauce Recipe



Ingredients
  • 2ea 7 1/2oz cans minced white clams
  • 4 cloves garlic, minced or chopped
  • 1/4 cup butter or margarine
  • 1/4 cup virgin olive oil
  • 3 tbls. chopped parsley
  • Grated Parmesan cheese
  • 1 tsp salt
Directions

Drain clams, saving 3/4 cup of the clam juices. Set aside. In a cast iron skillet or heavy fry pan, slowly heat the olive oil and butter, add garlic and saute until golden. Remove from heat. Stir in saved clam juice, add parsley, salt and bring to a boil. Reduce heat; simmer uncovered 10 minutes, add clams and simmer 3 minutes longer. Pour sauce over cooked spaghetti and top with Parmesan cheese. Serve with sour dough french bread and have extra parmesan cheese at the table.


This clam sauce will cover about 1/2 pound of spaghetti or other Italian pasta.
